What is a good brand of sushi knife?
My girlfriend has a set of Wustof knives that I thought were sharp until I tried to slice fish with them. I’m looking for a sushi knife, obviously the less expensive the better, but I’m not opposed to spending a few hundred dollars if I must. There are tons of “sushi” knives on the internet, but I want to know what BRAND is good. Thanks
First, if you’re looking to slice raw fish, make sure you get a sashimi knife. Do not use a chef’s knife and definitely do not use a serrated knife (like a bread knife).
As for brands, as you say, there are many. Global is a Japanese knife maker that makes very nice knives, including a sashimi knife. They are in the $100-$150 range, I believe, so not terribly expensive.
The downside of Global is that they are made from a difference substance from other knives, so you need to sharpen and treat with only Global accessories. If you take your knife to be professionally sharpened, you’ll need to ensure that they know exactly what they are doing with a Global knife. If they can’t explain to you why it matter, find another knife sharpener.
Clearly, you could spend a lot more and get some serious steel (to misuse a movie reference). But unless you are dead serious about sushi, you’ll be happy with the Global, as long as you treat it well.
Last thing: whatever you buy, make sure it’s made for your hand. By this, I mean that it feels right to you and your hand size. Also, with a sashimi knife, their are right-handed and left-handed knives (since the blade is tapered on only one side). So, double-check to see that it matched you “handedness.” Some sashimi knives may “cheat” by being ambidextrous. These are cheats and you will lose something with them, since they aren’t built to do the task as well as they could.
